By putting the spices right against the meat, you’re making sure they really pack a punch. And hey, if you’re not a fan of the skin, you can just remove it after cooking, and all that herby taste will still be in the meat. Starting with salt and pepper is always a good idea. But don’t stop there. Autumn herbs like rosemary, thyme, and sage are perfect with turkey. Feel free to get creative and add your own favorite seasoning mixes too.

Marinated Thanksgiving Turkey Recipe

This marinade will take your ordinary turkey and turn it into a tender, tasty and golden brown delight.

Ingredients

  •     2 cups water
  •     1-1/2 cups chicken broth
  •     1 cup reduced-sodium soy sauce
  •     2/3 cup lemon juice
  •     2 garlic cloves, minced
  •     1-1/2 teaspoons ground ginger
  •     1 teaspoon smoked black peppercorns, ground
  •     2 turkey-size oven roasting bags
  •     1 turkey (12 to 14 pounds)

Directions

  1. Start by combining the first 7 ingredients, set aside and refrigerate 1 cup of the mixture for basting. Next, place one oven roasting bag inside another, and place the turkey inside the inner bag then pour in the remaining marinade. Seal the bags, making sure to press out as much air as possible. Turn the bag several times to coat the turkey evenly. Place in a shallow roasting pan and refrigerate overnight. Be sure to turn the bag several times to ensure even marination.
  2. First, remove the turkey and drain and discard the marinade. For grilling, prepare your grill for indirect medium heat. Tuck the turkey’s wings under and arrange it breast side down on the grill rack. Cover and grill for 1 hour. On a charcoal grill, add 10 briquettes to the coals and turn the turkey. Baste it with the reserved marinade. Continue cooking covered for 1-1/2 to 2 hours, adding 10 briquettes periodically to maintain heat and basting every 30 minutes, until a thermometer in the thigh reads 170°. After removing the turkey from the grill, tent it with foil and let it stand for 20 minutes before carving.
  3. For conventional roasting, follow the same marinating steps overnight. Preheat your oven to 325° and place the turkey on a rack in a large roaster. Bake uncovered for 3 to 3-1/2 hours, or until the thigh’s temperature reaches 170°, basting frequently with the reserved marinade. If the turkey starts to brown, cover it lightly with aluminum foil. Once done, remove it from the oven, tent with foil, and let it stand for 20 minutes before carving. If desired, make gravy from the pan drippings and serve it with the turkey.

  • If you choose to roast your turkey make sure to save the pan drippings for the best tasting gravy. 
  • No peeking! While it’s tempting to check on your turkey, it’s best to trust the cooking process and time. If you need to baste the turkey or check its temperature, try to do it quickly and infrequently to minimize the impact on the cooking environment. Opening the oven door cools the oven, which can lead to uneven cooking, moisture loss and even inconsistent browning of the turkey’s skin.
