This homemade rub is best for chicken kabobs. This basic recipe will marinade the chicken to give it the middle-eastern flavours. BBQ it over
the grill for complete experience and you can add vegetables to the skewer if desired. We suggestonions, green peppers, tomatoes and mushrooms on the grill.
Mama Maria's Jamaican Curry
This fiery blend can be rubbed on pork or chicken before grilling, or use it mixed with rum, honey, lime juice and oil to marinade the meat, then BBQ. Also works well with fish.
Montreal Steak Rub
Montreal Steak Spice is a dry spice rub used to flavor steak that was made famous in Montreal and has become a marketing term for a number of commercial spice mixes. The recipe varies, but Montreal Steak Spice usually includes ingredients such as pepper, salt, coriander, dill, mustard seeds, dehydrated garlic and onions, red pepper flakes, rosemary, thyme, paprika and caraway seeds.
Panch Pooran
This recipe originates from the region of Bangal and is commonly used for pickling mango. The blend consists of Kalonji seed, fenugreek, cumin, fennel seed and brown mustard seed.

This spice blend is known throughout India for its unique flavor. This masala is used to make homemade pickles. This spice mix is usually combined with oil and mixed with pieces of green mangoes. Good in all sorts of pickles using mango, lemon, bitter-gourd, cucumber, radish, and onion.
Piri Piri
As it says this blend is full of piri piri chillies with oregano and garlic as the key notes. It can be used as a dry rub, or mix with oil and baste over chicken. If I want it milder I mix it with ketchup, honey and oil and baste over drumsticks. The kids love it that way!
Poseidon's Catch
Blend this mix with lime juice & coconut milk and rub over fish, then wrap the fish in banana leaves and slow-cook on the BBQ. Thats only one example! This spice mix is great to experiment with.
